HEARTY POTATO CHOWDER 16 servings @ approx 1 cup each
Ingredients: cooking spray 4 pounds frozen potatoes (Obrien style or shredded in 16 oz bags are easy!) 4 sweet bell peppers diced (any color fresh or frozen) 5 cans fat free evaporated milk 1 tsp salt 1 tsp black pepper 1 cup chopped green onions (SAVE SOME OF TOPS FOR GARNISH) 1-2 pounds Canadian bacon or ham (diced)
1. Spray crockpot with cooking spray. 2. Add all ingredients (save some green onion tops for garnish) 3. Cook on low heat 6-8 hours or high 4-5 hours.
TACO SOUP 16 servings@ approx 1 cup each
Ingredients: 3 Pounds Ground Beef 2 Onion red or white (diced) 2, 15 oz can diced tomatoes with jalapenos 2, 4oz can green chilis chopped 2, 15 oz can corn-not drained 6, 15 oz cans of beans (can be any mixture of black, pinto, kidney)(drained) 2 pkg taco seasoning OR homemade Taco Seasonings
Gluton-free Homemade Taco seasoning: 2TBS chili powder 2TBS ground cumin 2TBS onion powder 2TBS garlic powder 2TBS paprika 2TBS oregano 1tsp salt 2 tsp cayenne pepper 1. Brown ground beef in skillet with diced onion and diced peppers. 2. Drain fat from burger mix and put into crockpot. 3. Add all other ingredients and stir. 4. Cook on low heat 6-8 hours or high heat 4-5 hours.
AFRICAN CHICKEN SOUP 16 servings @ approx 1 cup each
Ingredients: 2-3 pounds chicken breast cut into strips or cubes (raw or cooked). ¼ tsp crushed red pepper flakes ¼ tsp ground black pepper 21/2 cups onions diced 2 bell peppers chopped (any color but red and green are pretty) 2 cloves garlic-minced 10 cups chicken stock 2 cups diced tomatoes (or 2 cans diced tomatoes) 2/3 cups INSTANT rice 1 cup peanut butter (regular or crunchy) -STIR IN JUST BEFORE SERVING
1. Saute chicken, pepper flakes, black pepper, peppers, onions, garlic in a frying pan approx 8 minutes and then put in crockpot. 2. Add chicken stock, diced tomatoes and instant rice to crockpot. 3. Cook 4-5 hours on high or 6-8 hours on low. 4. Just before serving stir in the peanut butter.
WHITE CHICKEN CHILI 16 servings @ approx 1 cup each
Ingredients: 8 cups of Chicken Stock 6 cans white beans 2-3 pounds cooked shredded or cubed chicken 1, 16 oz jar picante sauce 4 tsp cumin 3 cloves garlic-minced salt and pepper to taste Garnish= shredded cheese, tortilla chips, onion-optional Put all ingredients, except garnish, in crockpot and cook on low 6-8 hours or high 4-5 hours.
THREE BEAN TURKEY CHILI 10 servings@ approx 1 cup each
Ingredients: 3 pounds ground turkey 1 large onion –chopped 2, oz cans chopped green chilis 2, 15oz cans Kidney beans 2, 15 oz cans black beans 2, 15oz cans chick peas (garbanzo) 2, 28 oz cans diced tomatoes 2TBS chili powder 1. Brown ground turkey in pan with chopped onion, drain off fat. 2. Put in crockpot and add all other ingredients. 3. Cook on low 6-8 hours or high 4-5 hours.
HEARTY MUSHROOM & BEAN SOUP 10 servings @ approx 1 cup each Ingredients: 3 pound fresh mushrooms-sliced 2TBS olive oil 10 cups stock (vegetable/chicken/beef) 1 large onion-chopped 4 carrots- grated 4 celery stalks- chopped 2 cans cream mushroom soup 3, 15 oz cans of beans (any kind) drained & rinsed 1TBS garlic powder or 3 cloves fresh minced 1tsp salt 1tsp black pepper 3 bay leaves 1. Heat oil in fry pan and add mushrooms, celery and onions, sauté till golden brown, then add carrots and sauté approx 2 minutes longer- pour all into crockpot. 2. Add the rest of the ingredients and stir. 3. Cook on low 6-8 hours or on high 4-5 hours. 4. Remove bay leaves before serving.
